How to Prepare Polish Pierogi
By:  Fr. Jan Syzlar, CM
(Poland)

Sometimes we should talk about Poland. Poland, as you see, is a beautiful country with rich traditions and the very best food in the world! I am writing the recipe for my favorite food – wonderful Polish pierogi. To eat pierogi, you must first prepare it! To do that you need to have the following ingredients: 3 cups flour, 2 eggs, 1 cup of sour cream, and ½ teaspoon salt.

For the filling, you will need: 5 potatoes, one onion, 3 slices of American cheese, and butter.

First, you must boil the potatoes, drain them, and add onion in oil. Add cheese and mash the mixture together. Set it aside. Next, combine the flour, the eggs, the sour cream, and the salt. Knead it all together for 10 minutes, and then divide it into 3 portions. Roll out the dough on a flat surface and cut it into squares. Put one teaspoon of the filling onto each square, fold the dough over it, and seal the edges. Place about 1 ½ dozen pierogi into half a kettle of boiling water for 5 minutes. Boil and then drain. Add butter and onions to the pierogis, and serve them warm with sour cream on top! Oh, aren’t they delicious??? Enjoy eating them and feel good!
